Thai Green Tofu Curry

For some reason I had never before ventured into the land of green curries before, but now I think it will be a stand by staple. So quick and easy and tasty! Oh my! I'm a bit afraid of coconut milk so I didn't put as much in as is probably normal, but I liked it that way.

Ha! I'm a bit nervous to try either curry or coconut milk! I have heard very good things about curries, but still haven't tried it.

I have been trying to up my bravery in trying new foods, and to this point it has worked out very well.

I suppose I should give curry a chance, eh?

Why the coconut milk fear? It's just a base for the curry, brings the flavors together and makes it creamy and "saucy"... Mmmmm... I always add extra 'cause I like my curry with loads of sauce to soak into the rice.

I dunno. I'm weird like that. I don't like actual coconut, so I used it soaringly. Next time I think I will add more though...

And clearly I mean sparingly. I wasn't cooking whilst flying. That would be impressive.
