Catching Up!

Sorry I haven't been blogging recently! I can't even use uni as an excuse because I'm on holiday just now. I'm just a bad, bad blogger! Anyhoo, I have been taking pictures so here's a few recent ones.

Oh. My. Gods. Where has sushi been all my life? I think I love it more than life itself! This was my first attempt at making sushi, and I think I did rather well, even if I do say so myself! I filled two rolls with the spicy tempeh filling from the PPK, and one with cucumber and avocado. Both fillings were absolutely delicious, but me and Gary both preferred the spicy tempeh filling. So, so good. If you haven't tried your hand at making sushi yet you should. It's easier than you would think. Oh! The dip we had with it was teriyaki, and it was delicious!

Next up are some cupcakes, unsurprisingly from Vegan Cupcakes Take Over The World. As I've explained before I'm not a huge cupcake fan but my mum is coming up to visit tomorrow and she really loves carrot cake, so I thought I'd try the carrot cake ones. They're really good. Gary likes them even though he claims to hate carrot cake, but I have to agree they're not over carrot cakey. The cream cheese frosting is delicious. I was a little bit sceptical about putting the chopped walnuts around the edge because I'm not a huge fan of nuts on cakes, but they really added something to it.
Don't you just love my trolley? Over the years it's had many uses, from fruit bowl to lollipop holder, but today it will be a cake stand.

Behold theTower O' Cupcakes!


Or not... Whatever.

We had a fairly boring meal of spag bol tonight, it's dull so I didn't take a picture. However, as you can see I also made cupcakes tonight, and as everyone knows cupcakes are always blogworthy.

I haven't made cupcakes in ages, I got sick of them fairly quickly after the release of Vegan Cupcakes Take Over The World. Not long after the release of it I catered a few vegan buffets which involved staying up all hours baking what felt like twenteen bajillion cupcakes and then not eating any of them, so me and cupcakes have a very strained relationship these days... But Gary begged me so I made some tonight.

These are the basic chocolate cupcakes with peanut buttercream and some chocolate sprinkles I got at the Health Store ages ago. They were really good, I mean, it's chocolate and peanut butter, you can't really go a whole lot wrong, can you?

Ooh! Isn't my new cupcake tower pretty? It's from the new Argos catalogue (link). Gary bought me it so I would make cupcakes again, it's much nicer than a smell old plate, eh?

And yes it's a rubbish picture, it's becoming a bit of a theme here, deal with it.

Jaffa cupcakes and pressing tofu!


Orange puding cupcakes from Vegan Cupcakes Take Over The World. These were brilliant, and they tasted eerily similar to good old jaffa cakes.

VCTOW and Vegan With A Vengeance by Isa Chandra Moskowitz are my two favourite cookbooks (and I have a lot of cookbooks). There's not a single recipe I've tried from either which hasn't been a huge hit, and every time I open them I find new things I want to cook. Both of them are completely covered in cooking debris, but that's the sign of a well used cookbook isn't it?




I'm making a tofu roast for christmas dinner (from a recipe someone posted on the vegan freaks forum), so I'm currently preparing my tofu by pressing the bejesus out of it. The tofu is wrapped in cloth in the colander at the bottom there. Anyway, I though it looked funny so I thought I'd share the photo.
