Seitan, Kale and Tomatoes

Got home from work and wanted something quick. I had some seitan cutlets kicking about so I marinated it in garlic and baked it. Served atop some garlic sauteed kale with roast vine ripened tomatoes. Drizzled in balsamic glaze.
